Hello,

I wonder how to adjust the php.ini like:
https://wiki.vtiger.com/index.php/System_Requirements#PHP_Configuration

I copy paste the whole list to the php.ini

and for config.inc.php

I cannot find any similar variable.

change only the required vars as per the list.
for the extensions, scroll down the php.ini file until you find the list,
enable by removing the semicolon (;) in front, if not already enabled.

The config.inc.php file referred to is in the vTiger source dir, browse to the place yu installed it and again change only the shown values.
